Pineapple With Rum

6 fresh pineapple slices -- about 1/2 inch thick (180 cal.)

2 tbl. dark rum -- plus

1/3 c. dark rum -- (84 cal.)

1 1/2 tsp. sugar -- (23 cal.)

1. Preheat oven to 375°.

2. Place pineapple slices in a baking dish that holds them snugly and that can also be taken to the table. Sprinkle 1/2 tsp. rum over each slice, turn, and repeat on other side. Let pineapple marinate for at least 15 minutes, but not more than an hour.

3. Bake for 10 minutes. Remove dish from oven, turn on broiler, and while it is heating, sprinkle 1/4 tsp. sugar over each pineapple slice. Then broil for 1-2 minutes to caramelize the sugar a little. Meanwhile, pour remaining 1/3 cup dark rum into a small pot and place on medium heat to warm through.

4. Take hot baking dish to the table, pour on the warm rum, and ignite by touching with a match. As the flames dance, ladle the rum over the slices with a long spoon. Depending on size of dish, it may be necessary to lift the dish at one side to collect the liquid. When the flames begin to die down, transfer pineapple to individual warm dishes.

AUTHOR'S NOTE: A great diet advantage to using rum this way is that its strong flavor precludes the necessity for much sugar, or any butter. The alcohol calories, burn off in leaping blue flames. This is an extremely easy dessert to put together and it appears to be much more wicked than its 118 calories per serving.
