1/2 cup unsweetened applesauce
8 oz can unsweetened crushed pineapple, reserve juice
1/3 cup skim milk
1/3 cup fat free egg substitute
1/2 tsp vanilla
1 3/4 cup all purpose flour
1/3 cup granulated sugar
2 tsp double acting baking powder
1/4 cup firmly packed brown sugar
Preheat oven to 350 degrees. With a wooden spoon, stir together the applesauce, pineapple juice, milk, egg substitute, and vanilla in a medium bowl. Set aside. In a large bowl, combine the flour, sugar, and baking powder. Make a well in the center of dry ingredients---add the applesauce mixture. Stir just until combined.
Scrape batter into 9 x 13 pan which has been sprayed with non-stick cooking spray. Spoon crushed pineapple over the batter and sprinkle with the brown sugar. Bake about 30 minutes till golden and toothpick comes out clean. Cool on a rack.
