Honey Whole Wheat Bread

Ingredients

2 1/2 cup all-purpose flour

1 cup whole-grain wheat flour

1 cup General Mills Fiber One cereal

1/2 tsp salt

1/4 cup honey

1 Tbsp olive oil(or your favorite oil)

1 1/2 cup water(120 to 130 degrees)

2 1/4 tsp yeast

Instructions

Mix 1-3/4 cups all-purpose flour, the salt and yeast in large bowl. Add warm water, honey and oil.(I prefer to use olive but you can use any that you want)Beat with electric mixer on low speed for 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in whole wheat flour and cereal. Stir in enough remaining all-purpose flour, 1/4 cup at a time, to make dough easy to handle.

Turn dough onto lightly floured surface, gently roll in flour to coat. Knead about 10 minutes or until smooth and elastic. Spray large bowl with cooking spray. Place dough in bowl, and turn greased side up. Cover and let rise in warm place for about 1-1/4 hour or until double. (Dough is ready if indentation remains when touched.)

Spray loaf pan with cooking spray. Punch down dough. Shape into 9" loaf. Place in pan. Cover and let rise in warm place about 40 minutes or until double.

Heat oven to 350. Bake 30-35 minutes or until loaf is golden and sounds hollow when tapped. Remove and cool on wire rack.

*Each slice contains 3 grams of fiber!

**If using quick active yeast, let dough rest 10 minutes after kneading, and omit first rising time.
