Cherry Jubilee Cake

(can be made with other combinations of pie filling, diet soda & jello mixes)


1 box White Cake Mix

2 Egg Whites

10 oz. Diet Soda (like Diet Cherry 7-up or Diet Sprite)

1 3 oz. box Sugar Free Cherry Jello

1-1/2 cups Hot Water

1 8 oz. pkg Lite Cream Cheese (can use Fat Free Cream Cheese)

1 8 oz. tub Lite Cool Whip (can use Fat Free Cool Whip)

1 Can Lite Cherry Pie Filling

- Add 2 egg whites and 10 oz. diet soda to cake mix. Beat together and pour into 13x9 pan (spray pan with Baking Pam spray first)

- Bake according to time on box

- Remove from oven and cool for 5 minutes.

- Poke holes in cake at random (use end of wooden spoon, chop stick, large fork, etc.)

- Dissolve Jello with the Boiling Water (don’t use any cold water and only 1-1/2 cups hot water).

- Pour Jello over cake entire cake.

- Refrigerate cake for 30 minutes.

- Beat Cream Cheese with mixer until smooth

- Add Cool Whip to Cream Cheese and mix together

- Frost top of cake with Cool Whip/Cream Cheese mixture

- Top with Pie Filling

Must be refrigerated


ran through the recipe builder and using the light ingredients it is 6 points @ 12 slices. Using Fat free cream cheese and cool whip is goes down to 5. It may be rich enough to cut in pieces smaller than 12 though.
