Broccoli Cornbread

10 oz frozen chopped broccoli

1/2 cup Mrs. Filbert's Golden Quarters Stick Margarine

4 oz frozen chopped onions

4 large egg(s)

1 cup 2% reduced-fat cottage cheese

6 serving jiffy corn muffin mix

2 Tbsp self-rising white cornmeal

1 tsp table salt

Preheat oven to 375. Spray 9x13 pan with Pam. Thaw broccoli and mash as much water as possible out. Melt butter, add chopped onion and eggs and beat lightly. Mix remaining ingredients and whisk with a wire whisk. Pour into prepared pan and bake until golden brown. Check after 15 minutes.
